Spring Cake

This cake is so incredibly easy I'm almost embarrassed to post it.  Almost.  In our busy lives though it's nice to have a go to cake recipe and I think this fits the bill.  The ingredients are FAR from natural BUT the eggs I used are pasture raised, organic eggs that are the best ever.  That helps, right?  :) 

Actually this cake I made for a birthday but use it whenever.  It is very versatile, use your favorite berries, a combo of seasonal fruit or leave it plain if you prefer. However the spirit leads :)    You can make it as a sheet cake or layered.  I've done both.

1 Lemon Flavored Cake Mix
Add 1-2 tsp of fresh lemon zest
(then follow ingredients and baking directions on package)

Take 1 small package of instant lemon pudding and make according to package directions.
Let it set

And as if the cake mix and instant pudding weren't enough of the processed foods...Add 1 tub (small) of (horror of horrors) Cool Whip to the pudding and combine gently



Frost the top of cake with pudding mixture OR alternatively, layer the cake with the pudding mix combo in between layers and the outside of the cake.

Garnish with fresh berries and fresh flowers (for this cake I used raspberries, Spanish lavender, rosemary and violets.)

Chill until you are ready to serve it.

Allow the organic eggs to remind you that not all of the ingredients are genetically modified chemicals and enjoy :)
